Sweet Summer Bites

My husband is a huge fan of sweets, particularly Italian pastries and ice cream. I’m a huge chocolate lover. This summer we are trying to cut back on the amount of added sugars we eat, which also means we are cutting back on how much ice cream and chocolate we eat at night.

For my husband, this is very hard as he is used to having ice cream almost every night before bed. I figure, if we don’t have ice cream in the house, problem solved. However, we joke he is not allowed to go to the grocery store unsupervised because he comes home with much too much dessert.

So, I decided I would try to find a small frozen snack that may help curb his sweet tooth. That’s when I found some frozen yogurt drops that were too expensive for my liking. So that meant I had to try to make my own.

While the first take wasn’t the prettiest, they were delicious and helped curb both our sweet cravings! We just pop one or two at night when we have a sweet craving and we feel much less guilty!

So what did I use?

  • Vanilla Greek Yogurt

  • Melting Dark Chocolate (baking aisle!)

  • Chopped Walnuts (or any small topping of your choice)

  • Mini Muffin Baking Pan

What I did

  • Scoop yogurt into mini muffin pan & freeze

  • Melt chocolate according to package instructions

  • Remove frozen yogurt from muffin pan & dip in chocolate

  • Place chocolate covered drops on parchment paper & freeze

Regarding the walnuts, or other topping - you can mix it right in with the yogurt or the melted chocolate, or just sprinkle on the chocolate before re-freezing. Whatever is your preference!

After thinking about it some more, I would probably use a silicone mold, which can be various shapes, because it is easier to pop the yogurt bites out. I would also melt the chocolate first and coat the mold or muffin pan with chocolate and then freeze. THEN I would scoop the yogurt into the chocolate lined mold, freeze, and then cover the top with melted chocolate and freeze until ready to enjoy. I will update this once I try it this way!

The bottom line?

I found a way to create a small dessert that is healthier for us to eat so we can take care of our sweet tooth without as much guilt & sugar.
